The black-eyed peas.

Begin with one pound peas. Soak in water over night. Wash and place in a cooking pot. Add four cups of water and one cup of chicken stock. Add four 1 inch cubes of salt pork, 1 teaspoon of allspice, and four bay leaves. Salt & pepper to taste.

Cook for 2 to 3 hours over a medium heat until the peas are soft but not mushy.

Serve with a suitable pepper sauce.
