Fried Chicken & Gravy

 

 

Ingredients:

Chicken:

One half of one half of boneless, skinless chicken breast per person. Or one thigh, bone in, skin on.
2 cups Bulgarian yogurt.
2 cups flour
Salt and pepper.
2 eggs
1/2 cup half & half.

Directions:

Salt and pepper the chicken, Place in a large bowl and cover completely with the yougurt. Allow to marinate at least two hours.

Cover the bottom of a cast iron skillet with 1/4 inch of oil (Peanut oil is best.) and heat.

Beat the egg and half & half mixture. Bathe a piece of chicken in it and then dredge well in the flour.

When the oil is hot, carefully place the chicken in the oil. For thighs, place the outside skin side down. Do not crowd.

Monitor, and after one side has browned nicely, turn. Adjust the heat so that the chicken cooks to the bone without the surface becoming too crispy. Everyone has their own taste here, so the cook pleases him/herself.

Cooked like this, it will take at least 20 minutes to do a skillet of thighs on both sides.

After the ckicken is cooked, set aside to keep warm while the gravy is being made.

Using one skillet, add flour to the remaining hot oil. Use your judgment. Not too dry nor too wet. Salt and pepper. Stir as you allow the flour to brown. When to mixture is ready, add water. This should take at least 3/4 cup, but have more at hand. There should be a cloud of steam. The flour and oil will first look thick/pasty, but add water slowly until you get to the consistency you want.

Serve the gravy over mashed potatoes with the chicken.

Black-eyed peas are a good vegetable for this meal.

Notes:

This is not a healthy recipe, but it is good. Two breast halves may be too much for one person and it can be adjusted according to appetite.

If you have never made the gravy, it may take a time or two to make it come out right. Expect a lot of steam when you pour the water in the hot oil-flour mixture. Second, pour less rather than more water and continue until you get the consistency you want. Depending on the amount of oil you begin with in the skillet, the recipe may make a lot of gravy, but don't worry about saving it. Flour and water are cheap. Some may want to make this with milk in place of water, but I think water makes a tastier gravy. You can make a couple of cups of instant coffee and use that in place of water.

This is the basic recipe, but if you want, you can experiment by adding spices to the flour.
