Tofu Egg Rolls

 

Ingredients:

8 oz. medium tofu.
2 Tbsp sesame oil.
3 Tbsp low sodium soy sauce.
1-2 Tbsp dark brown sugar.
1 Small red bell pepper, cut into thin slices or 1 cup of broccoli crowns cut up.
3 Green onions, chopped into 1/2 inch lengths.
1 Indian egg plant, also similarly sliced.
2-3 Tbsp bean sprouts.
4 Cloves of garlic, minced.
Olive oil.
6 Egg roll wrappers.

1/2 Cup jasmine rice.


Directions:

Mix the sesame oil, soy sauce, brown sugar and a pinch of salt into a bowl. Slice the tofu into thin 1-inch squares or smaller and place in the mixture to marinate.

Prepare the rice.

Heat olive oil in the wok and stir-fry the tofu in small batches until it is browning on the edges and remove to a pan.

Reduce heat and add the minced garlic. When it is aromatic, add the vegetables (except the bean sprouts). Stir-fry to taste.

With the fire on low, return the tofu to the wok along with the bean sprouts. Mix all ingredients until heated, breaking up the tofu into smaller pieces..

Scoop enough of the mixture to fill one egg roll and fold. After doing all six wrappers, place them in a small amount of olive oil and brown. Serve with the rice.

Serves two.

Notes:

This recipe has a short history. Recently, I was shopping in a local chichi food store, and there was a person demonstrating his egg roll products (normal, spicy, curry). I had walked past him before, but this time I stopped to taste. The spicy was spicy, and the curry tasted of curry. But that was it. After I left, I thought, I can do better than that so that they have an actual flavor. Hence, the above recipe. It did not require much to produce more flavor than his.

I have added a pesto mixture to the rice once and yu hsiang sauce the second time, just to keep it from being bland.

Tofu and garlic are the essential ingredients. If you do not have all the others listed above, innovate and experiment. This is a recipe that can be used to empty the refrigerator. Is there some left over meat? Whatever that can be minced can be added to the mixture, assuming that you liked it to be begin with.

For some reason, this really works. I have tried it twice now, with slightly different ingredients, and each time it was very good ... comfort food. If you have qualms about tofu, forget them.
