Roasted Shrimp

 

 

Ingredients:

14 to 16 large shrimp, peeled & deveined. Frozen is OK. The size is from a package that is 13-15 per pound.
2 Tbsp. melted butter.
2 Tbsp. white wine.
1 lime, zest and juice.
3 Cloves of garlic, minced.
1/4 Cup grated parmesan cheese.
1 Tsp. basil.
1 Tsp. oregano.
2 Tbsp. olive oil.
1/2 Cup panko breadcrumbs.
2 Green onions.
3 Tbsp chopped cilantro.
2 Tbsp minced garlic.

Directions:

Preheat the oven to 425°.

In a large bowl combine the shrimp, butter, white wine, zest & juice, green onions, cheese, spices, and garlic. Season with salt & pepper.

Allow to marinate.

Mix breadcrumbs and olive oil in a small bowl and season with salt and pepper.

Arrange 7 or 8 shrimps in each of two baking dishes.

Spread the breadcrumbs over the shrimp.

Bake the shrimp for 10 to 15 minutes.

Serve with jasmine rice ... use chili oil in the rice water to add some spice.
