Spiced Pork Tenderloin

 

Ingredients:

1/2 Pound pork tenderloin, sliced crosswise into four pieces.
3/8 Tsp salt.
1/4 Tsp ground black pepper.
1/8 Tsp ground cinnamon.
1/8 Tsp nutmeg.


1 Braeburn (or Gala) apple.
2 Tbsp butter.
1 Large shallot.
1/8 Tsp salt.
1/4 Cup apple cider.
1 Tsp fresh thyme leaves.

Directions:

Mix together the following:

Salt.
Ground pepper.
Cinnamon.
Nutmeg.

Spread the mixture over the tenderloin and pat to cover.

Coat a cast iron skillet with cooking spray. Add pork and cook to desired doneness. Remove and keep warm.

Melt the butter in the skillet, swirling to coat.

Add apple slices, sliced shallots & 1/8 Tsp salt. Cook until the apples start to brown.

Add apple cider and let reduce some.

Stir in thyme leaves.

Return the pork to the mixture and heat.
