Potatoes with Garlic-Paprika Oil

 

Ingredients:

1 or 2 medium russet potatoes
2/3 Cup extra virgin olive oil..
3 or 4 decent sized cloves of garlic.
1 Tbsp sweet paprika.
1 Tsp smoked paprika.
Kosher or coarse sea aalt.


Directions:

Place the potatoes in a pot and cover with 2 inches of water. Bring to a boil and cook for ten minutes.

Mix the oil and paprika.

Drain the potatoes and cover with cold water. Allow them to return to room temperature.

Slice the potatoes crosswise into 1/8 inch sections. Do not cut completely through the potato.

Place the potatoes on foil in a baking sheet & brush the paprika oil liberally over the potatoes and between the slices. Salt the poraroes

Place in a 425º for 30 minutes. Remove and cover the potatoes again with the oil mixture.

Return to the oven for another 30 minutes.

 

Yield: About 4 servings.
