Mashed Potatoes

 

Ingredients:

6-10 small white or red potatoes (smaller than the size of a golf ball, no larger)
1 Tbsp minced garlic.
3 or 4 Green onions, chopped into 1/4 inch pieces.
4 Tbsp saltless butter.

Optional:

1/4 cup milk or less half&half.


Directions:

Cut the potatoes into quarters, cover with water and add the garlic.

Cook until very done being certain that the pot does not go dry.

Add salt and pepper and 4 tablespoon of saltless butter.

Using a potato masher, reduce to mush.

Add the onions and mix.

Optional:

At this point, you have the basic potatoes done. But you can finish the them however you want. If they seem too thick, then add the milk/half&half. A dollop of sour cream or yoghurt won't hurt. Just restrain yourself and don't start adding chocolate.

Yield: At least 3 servings.

Notes:

This scarcely counts as a recipe, and it is provided here for the following reason. I have found that not everyone likes potato salad with their BBQ. No, I don't know why. Then I made this concoction. It is not intended to accompany fried chicken, chicken fried steak, etc. and to be covered by gravy. It seems to stand independently. Two separate consumers expressed approval of it as it accompanied BBQ ribs. So here it is.
