Fried Rice

 

Ingredients:

4 green onions
2 eggs
1/2 cup grated carrots
1/2 cup broccoli florets
1 small bell pepper, julienned
3 Tbsp olive oil
1 Tbsp crushed red pepper
5 or so cloves of minced garlic
2 to 3 Tbsp fresh minced ginger
3/4 cup jasmine rice

Directions:

Add 1 Tbsp olive oil and 1 Tbsp soy sauce to 11/2 cup of water and cook the rice. When done, spread it on a sheet to cool. It will also dry out some. A pizza pan will do.

Heat the 3 tbsp oil in the wok and add the 2 eggs. Stir them and break them up until they are scrambled.

Add the garlic & ginger cooking them until aromatic. Then add the carrots, onions and peppers. Stir fry until done.

Add the cooked (and cooled) rice, mix and let cook for a couple of minutes. Then add the broccoli and cook to taste. Add soy sauce as you want towards the end.

Yield: 3 servings.

Notes:

This recipe was an accidental find. I was walking into the supermarket one day and the person walking out passed his cart on to me. In the cart, he had left behind a printout this recipe, which seems to have originated on Rachael Ray's Food TV cooking program..

I have adapted it some. I think the recipe began as a Cantonese dish, but I have added crushed red pepper to give it some spice. The recipe also used frozen peas in place of broccoli. I didn't have any frozen peas, but I did have broccoli.

Three/quarters cup of rice will feed two and leave some for leftovers.
