Grilled Chicken with Thai Spiced Oil

 

Ingredients:

6 Tbsp peanut oil
2 Tbps minced ginger
2Tbsp minced garlic
4 Tsp grated lemon peel
4 Tsp soy sauce
1/2 Tsp turmeric
2 boneless, skinless chicken breast halves

Directions:

Blend peanut oil, ginger, garlic, lemon peel, soy sauce & turmeric. Reserve 1/4 cup. Coat or marinate chicken breasts in the remaining mixture. Grill about 6 minutes per side. Serve with reserved oil.

Accompany with thin rice noodles coated with peanut sauce.

Yield: Two servings

Notes:

This is one I haven't tried yet (9/03/00). It looks like it should be good, but if it fails, I'll remove it.

I've done the recipe, and it has been pronounced good. I ended up marinating the chicken in the peanut oil mixture for about an hour, and while the chicken cooked I basted it with the remaining marinade. If the rest of the meal is not ready when the chicken is finished, take the 1/4 cup of reserved peanut oil mixture, pour it over the chicken and place in the oven to keep warm while everything else is prepared. It didn't dry out.
