Chicken Pita Sandwiches

 

Ingredients:

3 Strips of chicken tenders. Each sliced lengthwise into at least three pieces & crosswise into three. Salt & pepper lightly.
1 Tbsp Thai peanut satay.
1 Tbsp soy sauce.
1 Tbsp sesame oil.
Salt and pepper.
1 Tsp ground red pepper.


1/2 Cup cilantro. Chopped roughly.
2/3 Cup snow peas. Ends nipped off and peas sliced lengthwise into thin strips.
2/3 Cup shitake mushrooms. Sliced.

Directions:

Mix the satay sauce, the soy sauce & the sesame oil in a bowl. Add the chicken to marinate.

Add 1/2 Tbsp olive oil to a wok, and stirfry the snow peas & mushrooms lightly. Do not over cook. Set aside.

Stirfry the chicken until just not pink and set aside.

To serve, heat the pita bread wrapped in a moist papertowl in the microwave for 10 seconds. Remove and cut crosswise into two pieces.

Add the chicken & vegetables to the pita bread. Dab on some satay sauce if you want, and top with the cilantro.

Yield: 2 sandwiches, 1/2 of a piece of pita bread.

This recipe was inspired by some pita bread recipes on the internet, but it was mostly an invention by me.
