Chicken with Mango Dressing

 

Ingredients:

2 Boneless, skinless chicken breasts.
2 Bunches of baby bok choy.

Directions:

The mango dressing ­

3/4 Cup olive oil.
3/4Cup mango chutney, Major Grey's.
6 Tbps rice vinegar.
3 Cloves garlic.
6 Tbps soy sauce.
1 1/2 Tbsp sesame oil.
1 1/2 Tsp Dijon mustard.
1 1/2 Tsp crushed red pepper.

Combine ingredients in blender and blend until smooth.

Season with salt & pepper as required.

The remainder ­

Paint the chicken breasts with the mango dressing.

Split the bok choy and paint the interior with the mango dressing.

Allow to baste and then place on the grill and cook until done, basting as needed with the remaining mango dressing.

Notes:

"Major Grey's" appeaars to be a type, not a brand of mango chutney.
