Chicken Kebab

 

Ingredients:

1/2 Chicken breast, boneless & skinless.
1 Medium red onion, cut horizontally into 2 pieces and then those pieces cut into 6 wedges.
1 Medium portobello mushroom, 3 to 4 inches, sliced into 3/4 inch pieces.
1 Medium red bell pepper, chopped into 3/4 inch pieces.
1 Medium yellow squash, sliced into 1/4 inch pieces. If you want, you can add some zucchini as well.
2 Tbsp sesame oil.
3 Tbsp soy sauce.
1 Tbsp liquid smoke.
1 Tbsp brown sugar.
2 Tbsp olive oil.
Salt & pepper.

Directions:

Slice the chicken breast lengthwise in half. Then cut each slice into 6 sections. That should yield pieces about 3/4 inch cubed. Thread 6 pieces onto 2 skewers each. Salt & pepper.

Thread the onion, mushroom, bell pepper and squash onto 4 skewers. There should be enough to do that. If not, add some more.

Mix the sesame oil. soy sauce, liquid smoke, brown sugar & olive oil into a bowl and whisk. Using a brush, cover all six skewers well with the mixture and let rest.

Place the skewers on the grill & cook until done. Use the liquid mixture that has come off the skewers to baste them while cooking.

Notes:

This is another that is not really a recipe, but it seems to work well.

Chickens seem to vary widely in size now. Some weigh in the range of 9 pounds. If you find one that large, one half of a breast is enough for 2 servings.
