4 Chicken thighs.
1 Medium white onion, chopped into small pieces.
1 Medium portobello mushroom, sliced into 3/4 inch pieces.
1 Medium red bell pepper, chopped into small pieces.
1 Medium yellow squash, chopped into small pieces.
2 Stalks from a bunch of celery, chopped into small pieces.
3 Cups of tomato sauce.
2 Tbsp sage.
2 Tbsp minced rosemary.
4 Tbsp olive oil.
Directions:
Salt and pepper the chicken thighs, dredge in flour and fry in the olive oil until nicely brown & done. Remove & set aside.
Add the onion, mushrooms, bell pepper, squash and celery to the oil & leftover chicken bits in the pan. Fry until the onion is translucent .
Return the chicken to the vegetables, cover with 3 cups of tomato sauce. Add the sage & rosemary.
Simmer for 20 or so minutes.

This recipe began with a Molto Mario Cooking TV program on 8/6/1996. Except for the broad outline of chicken & vegetables, it has changed. Mario's began with one whole chicken.
Chicken cacciatore is more a concept than a recipe, and you can add what you want to the mixture (the idea of "cacciatore") and use any part of the chicken you want. Thighs seem a convenient bodypart to work with.
Unless you are really hungry, this is a 4 serving recipe. Leftovers will improve.
